Deşti domates, or "pot tomato," is an heirloom species, native to the Anatolian region of Turkey. It belongs specifically to the surroundings of Diyarbakır. The name, Deşti Domates, is rooted in the practice of preserving this specific tomato in clay pots, called deşti. This heirloom tomato is quite adapted to the harsh climate of its homeland. It displays drought and heat tolerance, making this variety do relatively well in harsh environmental conditions and ensuring its growth in the changing pattern of environmental conditions. The clay pots, deşti, are used in Turkey for countless tomato based meals recipes because they impart a deep flavor.
