Chile Bitxo de la Republica is a heirloom pepper variety essential to Catalan culture. Chile Bitxo de la Republica is a visually attractive pepper due to the color change that occurs during maturation. Initially it is a dark shade of purple, almost black; gradually becoming a light green color; then turning yellowish and ending with an intense red hue. Bitcho de la Republica is a symbol of Catalan resistance for these three colors appearing during its maturation that recall the Catalan Republic flag. The plant produces a branched and productive bush up to 80 cm tall. The peppers are elongated, about 3 cm long and they can be eaten fresh or dried.
