Epazote is a hardy herb native to both Mexico and Central America.  Its tenacity to grow under poor soil conditions makes it a valuable resource for sustainable agriculture– ensuring that food supplies are guaranteed in the face of changing weather patterns. It persists in drought conditions thanks to a tap root that runs deep into the ground to connect with water stored in deeper layers of soil. Epazote adapts to high temperatures and manages to grow well in both dry and wet climates. The plant is inherently resistant to pests which reduces the need for chemical interventions in agricultural settings. The use of epazote recorded for hundreds of years in Mexican cuisine and folk medicine accentuates the deep heritage of the herb. Epazote is noted for its flavor when used in beans, stews and other traditional dishes.
